Happy St. Patrick’s Day Vegan Dish

I get so excited when I discover delicious and good-for-you food pairings. ┬áThe vegan meal that I put together on Sunday before St. Patrick’s Day came together organically using the foods I already had. ┬áThe heart of the meal was Dr. Praeger’s California Veggie Burger, which I have never tried before and now I am a fan (and so is my 15 year old son)!

20140316-164328.jpgSo here it is–a 100% vegan, green, perfect St. Patrick’s Day dish:

–handful of spinach

–Dr. Praeger’s California Veggie Burger

–1/2 of avocado

–1 pickle

–“forkful” of seaweed salad (from The Fresh Market)

–chopped parsley

 

Directions: on the bed of spinach place cooked (as directed on the package) Dr. Praeger’s California Veggie Burger, arrange half of avocado, pickle and seaweed salad. ┬á Simply sprinkle chopped parsley, olive oil, vinegar and ENJOY!
