Simple Vegetarian Soup with Kitchari Spice Mix in 10 easy steps:

Simple Vegetarian Soup with Kitchari Spice Mix

1) Melt one teaspoon of ghee or coconut oil in a large pot.

2) Add and sauté a few thinly chopped garlic cloves.

3) Add one chopped onion, two chopped carrots, and a few chopped celery sticks, and continue on slow heat for about 10 minutes. 

4) Add water. Keep heating until boiling. 

5) Add one teaspoon of tridoshic spice (fennel, cumin, coriander).

6) Add a cup of frozen cauliflower and a cup of kale to slow boil until all soft.

7) Add one grated beet (cooked or raw).

8) Add one tablespoon of Kitchari mix. 

9) Add more water to cover the vegetables. Slow cook for another 10 minutes. 

10) Pour into your favorite bowl, sprinkle with anything green (I used arugula because I did not have anything else ;), and enjoy!
